Last on the list of covered pots is the New Mexican pottery style tortilla warmer. Many people are surprised by the large size of this casserole that will also serve you well as cookware, bakeware and tableware. Add oven heat and your tortillas will be hot on the table for your entire meal. There are small holes in the lid that allow some steam out so your casserole will “reduce” but also so your tortillas don’t get stuck together. The tortilla warmer is our only flat bottomed casserole. Flat-bottomed cookware or bakeware will move juices evenly around the bottom of the dish.
